To find the Alpha Wolf in V Rising you should go to the Wolf Den in Farbane Woods. You can locate the Alpha Wolf by going to the center of this area.
You no longer need the blood altar to find the Alpha Wolf but he will walk around Farbane Woods and reside in his den.
The fight against the Alpha Wolf is one of the easiest in the game (it is basically a beginner boss) and most players fight them as soon as possible, with some speedrunners killing them in under 8 minutes.

You might also want to make some Vermin Salves beforehand to stay full HP.
